Combine the flour, baking powder and salt in a large bowl.
Add the dashi and whisk until smooth. Stir in the eggs and grated nagaimo, if using.
Add the cabbage, spring onions and seafood and mix until evenly combined.
Heat your Legacy Pan over medium heat. Add half the oil, then spoon in half the batter and spread it into a thick, even pancake.
Cook for approximately 5 minutes, until the base is deeply golden and firm.
Lay half the pork belly over the top. Carefully flip the pancake using 2 spatulas and press it gently.
Cook for another 5–7 minutes, until the pork is browned and the centre is cooked through.
Transfer to a plate and repeat with the remaining batter, pork and oil.
Brush with okonomi sauce and finish with Kewpie mayonnaise, katsuobushi, spring onion and sliced nori.
Serve immediately.
Okonomiyaki is often described as a savoury pancake, but it is closer to a crisp-edged cabbage fritter with plenty going on inside. This Osaka-style version is filled with prawns, spring onion and cabbage, then topped with pork belly before being flipped in the pan. Dashi gives the batter depth, while grated nagaimo makes it lighter and softer if you can find it. The cast iron holds enough heat to form a properly browned crust without drying out the centre. Finish each pancake generously with sauce, mayonnaise, bonito flakes and nori, then eat it while the edges are still crisp.
