Melt the butter in a Lil’ Legacy Pan over low heat.
Add the white sugar and brown sugar, then simmer for 4 minutes, stirring regularly. Do not let the mixture burn.
Set the pan aside in a cool place for at least 30 minutes.
Preheat the oven to 180°C.
Lightly mix the flour and cocoa powder into the cooled butter and sugar.
Add the eggs, vanilla and salt, then stir until just combined. Do not overmix.
Smooth the mixture evenly across the pan with a spatula or clean hands.
Wipe away any mixture from the sides of the pan with a paper towel.
Scatter the chopped chocolate over the top and gently press it into the brownie mixture.
Bake for 20 minutes.
Leave to cool in the pan for 1 hour before serving, so the centre stays warm while the chewy edges firm up.
This brownie is mixed and baked entirely in the Lil’ Legacy Pan. The butter and sugars cook together first, bringing a caramel note to the batter before the cocoa, eggs and vanilla go in. Chunks of dark chocolate are pressed over the top so they soften into the brownie as it bakes. Twenty minutes in the oven keeps the middle fudgy and the edges chewy. Leave it in the pan for an hour before cutting. It will still be warm, but firm enough to hold together beside a scoop of ice cream.
